Cauliflower Nachos

Ingredients:

  • 1 large head of cauliflower 

  • Avocado oil (or roasting oil of choice)

  • Sea salt to taste

  • 1 bell pepper

  • 1 small onion

  • 2 jalapeños peppers (optional)

  • 1/2 tsp cumin

  • 1/2 tsp paprika

  • 1/2 tsp chili powder

  • 1/2 tsp garlic powder 

  • 1/2 tsp cayenne pepper (optional-if you like a little heat)

  • Cheese of your choice-shredded (~1 cup)- I recommend avoiding the pre-shredded cheese due to the additional processing.

Instructions:

  • Preheat oven to 400 F

  • Cut cauliflower in rows about 1/2 inch thick and then into tortilla chip- sized pieces 

  • Spread cauliflower on baking sheet

  • Drizzle with avocado oil and sea salt 

  • Mix the cumin, paprika, chili powder, cayenne pepper and garlic powder in a small bowl and sprinkle over the cauliflower 

  • Toss the cauliflower around to ensure it is coated with the seasoning

  • Dice the bell pepper, onion and jalapeños and spread over the cauliflower 

  • Roast for 40-45 mins (or until cauliflower is tender)

  • Top with shredded cheese and return to oven until cheese is melted (~5 minutes)

  • Top with your favourite garnishes. I used salsa and a 1:1 mixture of mashed avocado and greek yoghurt and fresh cilantro 

  • Enjoy! These can get messy so you may want to have some forks on hand.
